Modern British with French twist

Telly chef Sean Clarke has big plans for the restaurant at The Old Palace Lodge.

Sean, a contestant in Masterchef the Professionals last year, believes eating engages many of our senses.

Born in St Albans, Sean (pictured) was sent to work in the kitchen of a local restaurant on work experience and fell in love with the whole craft of preparing food.

He is the first Head Chef in his family but his younger brother, 19 years old Nathan Clarke is a sous- chef.

He loves to transform simple fresh produce into delicious dishes.

He does not have a signature dish but he enjoys creating exciting flavours by fusing ingredients together.

“My style is modern British with a French twist”, he said.

He is also keen to support the localeconomy making every effort to source as many of his ingredients aspossible within 20 miles as well as using home- grown firms,something he developed.

“I am very ambitious,” explains Sean, “and always strive to be the best, my greatest achievement to date is being on MasterChef theprofessionals 2015; my immediate objective is to turn Henry’s into a fine dining restaurant in line with the Four Star hotel rating andto achieve AA rosette standards!”
